Healthy Side Dish: Red Pepper Quinoa Salad

Red Pepper Quinoa Salad
1 cup quinoa
2 cups water
1 red bell pepper
1 yellow onion
2 garlic cloves
1 big handful fresh basil leaves
½ lemon
¼ cup extra virgin olive oil
2 tbsp. red wine vinegar
Salt & pepper
Rinse off the quinoa and combine it with water in a medium pot. Bring to a boil, cover with a lid, reduce heat to a simmer and cook for 15-20 minutes.. for how its done check more at laurel on health food
